Apprenticeship level: Intermediate

Apprenticeship duration: 12 months

Possible start date: 13th November 2017

Working week: Monday to Sunday, daytime shifts, rota to be discussed at interview 40 hours per week.

Responsibilities:

General Kitchen and Staff Management

  • Responsible for assisting then Head Chef and Sous Chef in all operational aspects of the Kitchen and Bakery.
  • Complete opening and closing procedures for the Kitchen and Bakery
  • Practice a hands-on approach for all Kitchen staff and to get involved in many aspects i.e. cleaning duties etc
  • Assist with the completion of daily administration records, ready for inspection as required

Food Purchasing & Cost Control

  • Check deliveries on receipt ensuring that faulty items are returned, ensuring that the relevant paperwork is received and processed. Issues items to kitchen team as required
  • Ensure that an effective stock rotation procedure is adhered to at all times
  • Communicate with the Head Chef and Sous Chef on a regular basis regarding all stock levels

Quality Control

  • Consistently check produce before service for freshness and flavour
  • Report any issues with food quality and freshness to the Head Chef
  • Comply with the Stock Labelling and Rotation System to ensure products are identifiable and used in the correct order
  • Follow the Head Chef and Sous Chef’s lead in ensuring that the kitchen is always presentable

Food Production

  • Produce and present food in conjunction with the kitchen team, keeping abreast of current trends and wherever possible exceeding customer expectations
  • Take action to minimise wastage at all stages of food production implementing controls, keeping records and making reports as required]

Health & Safety

  • Comply with all hygiene and safety legislation and requirements, and promote a safe, healthy and environmentally secure environment
  • Follow correct food and hygiene standards
  • Adhere to all cleaning checklists
  • Ensure the Kitchen, surrounding work surfaces and floor are kept tidy and clean at all times
  • Communicate any issues with the Kitchen’s presentation to the Head Chef and/or supervising manager on duty
  • Use all chemicals safely and correctly

General

  • Co-ordinate service and maintenance as required to ensure restaurant and equipment is maintained to a high standard
  • Monitor and minimise unnecessary breakages of all kitchen equipment

Notwithstanding the detail in this job description, in accordance with TPE’s flexible working, the job holder will undertake such work as may be determined by the General Manager from time to time, up to or at a level consistent with the Principal Responsibilities of the job, and in any location within Tatton Park.
